Ingredients

  • 1 1/4 lb boneless, skinless chicken breasts
  • 1 tablespoon extra virgin olive oil
  • 4 heaping spoonfuls of minced garlic
  • 2 teaspoons lemon zest (about ½ lemon)
  • 3 tablespoons lemon juice (about 1 lemon)
  • 1 teaspoons fresh thyme (or 1/4 teaspoon dried)
  • 2 teaspoons honey (or maple syrup in a pinch)
  • 1 teaspoon red chili flakes
  • ¾ teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Preheat oven to 375 degrees.
  2. In a small bowl, add all the ingredients except the chicken and stir together.
  3. Place chicken breasts into pan, pour the marinade over and mix around until all the chicken is coated. Arrange so chicken is in a single layer.
  4. Bake for 25-35 minutes until chicken is cooked through. If you want a crispy skin, broil on high for a minute before removing from oven.

This is my go-to recipe when I’m training very hard. The flavor profile is just so mouthwatering good, I don’t mind eating it every day for a week straight. If your macros allow, indulge in this recipe using chicken thighs instead of chicken breasts. Thank me later!
